Storing Manuka Honey
Honey is one of the few natural product that is self-preserving. Unlike most products that need to place in the fridge or freeze after opening, honey do not need to be kept in fridge after opening. The optimum temperate to store honey is between 18-22°C. Since fridge is approxiately 4-8°C and average temperature of Singapore and Malaysia is 28-33°C, the best way to store honey is in a cabinet or cupboard, away from heat sources and away from direct sunlight.
Do note that honey is naturally a low moisture content product, it should be kept tight to prevent the honey from absorbing moiture from the air
How to Store UMF Manuka Honey in Singapore and Malaysia
We understand that UMF Manuka honey is pricey compared to regular honey and you would like to achieve the best possible storage condition in the climate of Singapore and Malaysia. One of the main concern for most is whether to store it in the fridge because like most other food, we store it in a fridge to extend the shelf-life and preserve freshness. This is not the case for UMF rated Manuka honey. Since most of us get UMF rated Manuka honey for its health benefiting associated with antibacterial property, the first respond is to keep it in a fridge. This is however not the case.
The property of Manuka UMF rated honey is heat insensitive. Meaning that heat or high temperature in Singapore and Malaysia will not cause its antibacterial potency to decline when left outside the fridge. And when honey is storage in a fridge, you will discover that the honey will crystallised over time, meaning that has become 'harder' or 'less liquidity" or "thicker". Crystallisation of honey is a natural progression of low heat extracted honey over time. The speed of the crystallisation depends on the temperature - the lower the temperature, the faster the crystallisation. Do that crystallisation do not affect the quality of the honey.
Since UMF rated Manuka Honey is not heat and light insensitive, it is easier to store the honey and not worry that the activity will degrade over time. There is absolutely no need to store the honey in a fridge, unless you prefer a "thicker" feel for your manuka honey
